Chef André Chiang on closing restaurant, shifting focus to culinary education

André Chiang, one of Taiwan's best-known chefs, explains his decision to close his Michelin two-star restaurant by the end of this year and shift his focus to culinary education, as well as the training that will be offered at his new RAW Culinary Academy.
