Chef André Chiang on importance of defining Taiwanese flavors

Born in Taiwan but having worked in France and Singapore during his culinary career, acclaimed chef André Chiang told Focus Taiwan that Taiwanese flavors are his "comfort zone" and shared his thoughts on the importance of defining the spectrum of Taiwanese flavors, such as “three cups” (sanbei, 三杯) and “ginger and sesame oil (薑麻)."
